Our range Ratafia Champenois
Liquor with 18% of alcohol, the ratafia is a traditional production in Champagne.
Really sweet, it is taste as an aperitif or after dinner and could be use for some receipes of apple (jam, tarte tatin, etc.) or to marinated meats (pekin duck, etc.).
The « fine de Champagne » used for the mutation of the musts (to block the fermentation) is distillated from selected wines to reveals more fineness and the natural aromas of the grapes.

Liquor making : mutation of Pinot Noir musts with « fine de Champagne » (distillated wines)
On eyes :
Pink copper colour with a good brightness.
On nose :
Fruity nose on cherry eau-de-vie with subtils notes of damson plum and prune.
On mouth :
The first impression in mouth is smooth on the fruit alcoohol.
Then, delicate jam pear notes stir together with the prune taste.
Finale is on dry stone fruits.
Food pairing :
Polyvalent, this ratafia will paired with an aperitif (espacially during summer), but also with blue cheeses, meat or dessert.
It will be also the ally of sofisticated main like « foie gras ».
